This question actually comes up quite often. Yes, a typical French diet may include a lot of bread but, it’s also higher quality. Other French eating habits are also pretty different than the typical U.S. diet. If we look at the French lifestyle, the French also: • Eat 4x as much butter • Eat 60% more cheese • Eat 180 grams of fat from animal sources vs. 72 grams in the USA • Eat 3x as much pork • Have much less vegetable oils • Have less HFCS • Don't allow fortification • Tend to keep traditional foods • Have strict purity laws • Consume less sugar • Snack less What might be the most interesting is that they don't allow fortification. In America, Canada, and the UK, we have mandatory laws that we fortify our food with iron and synthetic vitamins. This may be why people have less digestive problems when they consume grains in European countries. For example, iron can create a lot of problems, especially health problems related to oxidation. Iron can: • Interfere with microbial life • Is very oxidative • Can increase your risk of diabetes • Can increase your risk of Alzheimer's • Can increase your risk of heart disease The synthetic antioxidants and vitamins also don't come out that good. Consuming synthetic vitamins, including the ones that are fortifying our food, may actually increase oxidation, which may increase inflammation and your risk of insulin resistance.
